the condensed milk also works with sugar substitute for a (mostly) sugar free condensed milk. The milk powder has some added sugar so how much sugar the recipe will end up having depends on which milk powder you choose but it's still a great option for people that needs to avoid sugar

Starting a caramel sauce with simple syrup is technically possible, but you’ve gotta boil most of the water away before the sugar can brown. It’s better to use a 3:1 sugar:water ratio to save time
