It’s either this or fried rice that our kids are asking on repeat lately … super quick to throw together. Spam Onigiri  Ingredients * 2 cups cooked Japanese short-grain rice (often labeled “sushi rice”), cooled until warm  * 1 (12-ounce) can Spam, cut into small cubes * 2 tbsp soy sauce * 2 tbsp sugar * 2 tbsp mirin * 6 eggs * Neutral oil * 1/3 cup furikake Garnish * Nori (seaweed) strips Instructions 1. Cook the Japanese short-grain rice according to the package directions. Let it cool until warm enough to handle. Do not season the rice with sushi vinegar. 2. Cut the Spam into small cubes and set aside. 3. Heat 2 teaspoons of neutral oil in a large skillet over medium heat. Add the Spam and cook until lightly browned on all sides, about 3 minutes. 4. In a small bowl, whisk together the soy sauce, sugar, and mirin. Pour over the Spam and cook for another 3 minutes, or until the sauce thickens and coats the Spam. Remove from the heat and let cool slightly. 5. Beat the eggs in a bowl. 6. In the same skillet, add a little more oil if needed. Pour in the eggs, season with a pinch of salt, and scramble until just set, about 1 minute. Remove from the heat. 7. In a large bowl, gently combine the cooked rice, glazed Spam, scrambled eggs, and furikake until evenly mixed. 8. With slightly damp hands or an onigiri mold, firmly shape the mixture into triangles. 9. Wrap each triangle with a strip of nori. 10.
