Today’s dinner: Tteokgalbi (Korean grilled beef patties) 떡갈비 My husband’s family has this wonderful tradition of gathering with all the relatives every holiday, cooking enormous amounts of food, and even packing up the leftovers to take home and enjoy for days after.  This year though, between me not feeling well and living away from family, Seollal passed by really quietly for us. I felt bad for my husband and finally made him tteokgalbi as soon as I felt better, something he‘d actually been asking for even before the holiday started. It comes together so easily, yet very rewarding and perfect for a main dish as well.  👩🏻‍🍳 Tteokgalbi Recipe Ingredients •500g minced beef (not too lean,regular fat works better)  •1/2 onion •1–2 spring onions (white part) •2 shiitake mushrooms •1/2 oyster mushroom •2 tbsp soy sauce •1/2 tbsp minced garlic •1 tbsp dark brown sugar •1/4 tsp ginger powder •A pinch of salt •1 tbsp glutinous rice flour •1 tbsp sesame oil •1/2 tbsp sesame seeds 1.Finely mince all the vegetables and mushrooms. 2.In a bowl, mix the minced beef, vegetables, mushrooms, and all the sauce ingredients together. Knead well for 5–10 minutes. 3.Chill in the fridge for at least 30 minutes to 1 hour. 4.Knead again and lightly slap the mixture with your hands (this helps the texture). Shape into flat, round patties. 5.Cook over medium heat first. Once both sides are nicely browned, lower to low heat and cook for about 10 minutes in total until fully cooked through. 6.At the end, brush the patties with a glaze made of 1:1:1 honey, soy sauce, and sesame oil for a glossy finish. The above recipe serves about 3-4 people, so you can simply freeze the leftover batch. #koreanfood #떡갈비 #tteokgalbi #homecooking
