Recipe  Pudding 4 large bananas 1/2 cup canned coconut cream 1/4 cup coconut sugar 2 cups vanilla plant-based yogurt 5 scoops vanilla plant-based protein powder (I use @drinkorgain) Whipped Cream 2 (15oz) cans coconut cream, chilled overnight  1/4 cup pure maple syrup 1 tsp pure vanilla extract To Assemble: 2 boxes Vanilla Waffers-I used @simplemills tasted pecan cookies because they’re tasty and vegan, gf,+ refined sugar free.  5 ripe bananas, sliced  1. Make the pudding: add all the pudding ingredients to a food processor or blender and blend until smooth and creamy. Put in an airtight container and refriderate at least 1 hour or overnight. 2. Make the whipped cream: Carefully open the chilled can of coconut milk (be careful not to shake). Scoop out the thickened cream into a large mixing bowl. Do not add the liquid at the bottom of the can. Add the maple syrup and vanilla extract. Use an electric mixer to beat everything together until smooth. This should take 1 to 2 minutes. 3. To assemble, set aside 1 box of cookies cookies, whole or crumbled, for garnish. In a 4- to 5-quart trifle bowl or a wide glass dish (or in 12 8-ounce bowls or ramekins), spread one-quarter of the pudding over the bottom and layer with one-third of the cookies and one-third of the sliced bananas (enough to cover the layer). Repeat the layering until all ingredients are finished. End with a final layer of whipped cream. 4. Cover tightly with plastic wrap and refrigerate for 4 to 6 hours. Cookies should be tender when poked with a knife. This dessert is best served within 12 hours of assembling.
