We divide it into 4 pieces and trim it slightly to give it more of a log shape. Then it is rolled into a roulade shape and poached at 52 °C sous vide for about an hour, depending on the size. Then roasted and carved for service. This way, you can do a large party all at once and move quickly through the service and plating aspects. All the trimmings can go into sauce making, or ground for a bolognese, braised to be fall-apart tender. Your choice.
