I hope you love them as much as I did 😭🍑 Dough: • 1 cup cold water • 2 cups oil • 2 cups sugar • 4 tbsp flour • 1 packet baking powder • 900g all-purpose flour (add more if needed) Filling: • Cookie crumbs from hollowed cookies • Apricot jam • Ground walnuts (I don’t like walnuts so I didn’t add them) For Decorating: • Red food coloring • Yellow food coloring • Granulated sugar Instructions 1. In a bowl combine sugar, oil, water, and 4 tbsp flour mixed with baking powder. Let sit for 30 minutes. 2. Gradually add sifted flour until you get a soft dough that doesn’t stick to your fingers. 3. Roll small balls (about 9g each) and place on a parchment-lined baking tray. 4. Bake at 300°F (150°C) for 15–20 minutes. Bottom should be lightly golden while tops stay pale. 5. While still warm, carefully hollow out the centers using a small knife. 6. Mix cookie crumbs, apricot jam, walnuts, and rum until combined. The rum flavor should be slightly stronger than the jam flavor. 7. Fill and sandwich cookies together. Wipe excess filling from outside. 8. In two bowls add water with red coloring in one and yellow in the other. Quickly dip each side of the cookie into the colors. 9. Let excess liquid drain, then roll in granulated sugar. 10.
