Day 58 of 100 days of cozy: let us know if you like these cute little mini meatloaves so much more than the OG. Sicilian Mini Meatloaves Recipe: 1 lb ground beef 1/2 lb pork sausage 3/4 cup Italian breadcrumbs 1/4 cup milk ( I used whole) 2 eggs 1 tsp each: oregano,onion powder, salt Pepper to taste 3 cloves minced garlic 1/2 cup tomato sauce 6 slices thinly sliced ham 6 slices of thinly sliced provolone Fresh mozzarella, small piece on each loaf Sauce: tomato sauce and parm cheese Preheat oven to 350. Mix meatloaf ingredients in a large bowl. Separate into 6 equal oval shaped “loaves”. Lay on a parchment lined sheet pan. Mix sauce ingredients in a small bowl. Use a pastry brush to spread sauce on top of each loaf. Flatten out and layer on ham, provolone and mozzarella. Roll tightly into “jelly roll” bake for 20 minutes, remove from oven. Add brocolli to pan, spoon on tomato sauce on each loaf and sprinkle everything with fresh Parmesan. Bake an additional 20 minutes or until meatloaf cooked though to 165.
