@camper.cook.42: Sharing my shrimp scampi recipe today! It’s a classic for a reason and so good with some fresh sides. Here’s what you need: 🍤 1 1/2 lbs large shrimp (16-20 count), peeled and deveined 🧈 2 tbsp unsalted butter 🫒 2 tbsp extra virgin olive oil 🧄 4 minced garlic cloves 🌶️ 1/4 tsp red pepper flakes (optional) 🍷 1/2 cup dry white wine or low-sodium chicken broth 🍋 1 ½ tbsp lemon juice, plus wedges for serving 🌿 1/4 cup chopped fresh parsley 🧂 Salt and fresh black pepper, to taste How to make it: 1. Prep shrimp: Pat dry and season with 1/2 tsp salt and 1/2 tsp pepper. 2. Sear shrimp: Heat 1 tbsp olive oil and 1 tbsp butter in a large skillet over medium-high heat. Add shrimp in a single layer and cook 1-2 minutes per side until just opaque. Remove to a plate immediately. 3. Make sauce: Lower heat to medium. Add remaining olive oil and butter. Sauté garlic and red pepper flakes for about 30 seconds until fragrant. Add wine and simmer 2 minutes until reduced by half. Stir in lemon juice. 4. Finish: Return shrimp to the skillet with any juices and toss to coat. Remove from heat, stir in parsley. Season to taste. 5. Serve: Enjoy over pasta (I used chickpea spaghetti noodles) or with crusty bread. I served mine with Field Peas and Fried Green Tomatoes 😋 #ShrimpScampi #HomemadeDinner #EasyRecipes #Seafood #HomeCooking
