The link is in my profile or go to fitfoodieselma.com🥰 • this recipe makes 8-10 cupcakes • for the muffins: 1/2 cup (gluten-free) oat flour (120 ml) 1/2 cup almond flour (120 ml) 1/3 cup unsweetened cocoa powder (80 ml) 1 1/2 teaspoons baking powder pinch of salt 2 eggs 1/2 cup Greek yogurt (120 ml) 1/3 cup maple syrup (80 ml) 1/4 cup apple puree (60 ml) 1/4 cup olive oil (60 ml) 1/4 cup milk of choice (60 ml) 1 teaspoon vanilla extract/paste 1/2 cup chopped 80% dark chocolate • for the frosting: 10 pitted medjool dates 1/4 - 1/2 cup milk (60-120 ml) 1/4 cup peanut butter (60 ml) 1/4 cup unsweetened cocoa powder (60 ml) 1 teaspoon vanilla paste/extract pinch of salt • optional: berries for topping • 1. Mix the dry ingredients together 2. Add the wet ingredients and mix well 3. Spoon into muffin pan cavities lined with muffin liners 4. Bake at 180 Celsius / 350 Fahrenheit for about 15 - 20 minutes or until a toothpick comes out with a few moist crumbs 5. Meanwhile soak the dates in boiling water for 10 minutes. Then add all the ingredients for the frosting into a blender or food processor and blend until creamy. Add less milk first and then add more if needed. Refrigerate until you are ready to decorate the muffins 6. Let the muffins cool down on a wire rack 7. Top with the frosting and enjoy! 8.
