Ingredients: * 2 bags Success Boil-in-Bag Pearl Couscous * 8 ounces halloumi, seared and cubed * 1 large yellow peach, pitted and diced * Kernels from 1 large ear of corn, cooked if desired * 6 ounces cherry tomatoes, halved * ¼ cup chopped fresh chives * 1 handful fresh basil, chopped * ½ cup pesto * Juice of 1 lemon * Salt and freshly ground black pepper, to taste * Crushed red pepper flakes, to taste Cook the pearl couscous according to the package directions. Let it cool slightly, then transfer it to a large bowl. Add the halloumi, peach, corn, cherry tomatoes, chives, basil, pesto, and lemon juice.
