Creamy French Onion Pot Roast 🧅 Everything I love about classic French onion pot roast, but finished with a creamy onion sauce and a layer of bubbling Gruyère. The beef gets fall-apart tender, the onions practically melt into the sauce, and a piece of warm buttered sourdough on the side is non-negotiable. Save this one for the first cozy Sunday that calls for comfort food. 🤍 Creamy French Onion Pot Roast Ingredients • 2¾–3 lb chuck roast • Kosher salt + black pepper • 1 tbsp olive oil • 3 tbsp butter • 2 large yellow onions, thinly sliced • 1 shallot, thinly sliced • 4 garlic cloves, minced • 1 tbsp Dijon mustard • 2 cups beef broth, divided • 1 tbsp balsamic vinegar • 1 tsp apple cider vinegar • 1 tbsp Worcestershire sauce • 1 tsp fresh thyme leaves, or ½ tsp dried thyme • ⅓ cup heavy cream • 1 cup freshly shredded Gruyère Instructions 1. Sear the roast for about 4–5 minutes per side, until deeply browned. Remove and set aside. 3. Reduce heat to medium-low and add the butter, onions and shallot. Cook for 25–30 minutes, stirring occasionally, until soft, golden and jammy. 4. Add the garlic and thyme and cook for about 30 seconds. Stir in Dijon. 5. Pour in about ½ cup beef broth, scraping up all of the browned bits from the bottom of the pot. Add the remaining broth, balsamic vinegar, apple cider vinegar and Worcestershire. 6. Nestle the roast back into the onions. Cover and bake for 3–3½ hours, or until the beef is very tender and pulls apart easily with a fork. 7. Transfer the roast to a plate and loosely pull it into large pieces. 8. Place the Dutch oven over medium heat and simmer the onion sauce for 5–8 minutes, until slightly reduced. Lower the heat and stir in the heavy cream. Taste and adjust salt and pepper as needed. 9. Return the beef to the creamy onion sauce. Top with shredded Gruyère and broil for 2–4 minutes, until melted, bubbling and golden.
