I learned the hard way, don’t blend when the ingredients are too hot 🤣. This has become of my kids’ FAVORITE meals I make. It’s definitely a labor of love but so worth it! SALSA • 7 Roma tomatoes, halved • 2 guajillo chiles, deseeded and me • 1 jalapeño, deseeded • 4 garlic cloves • ½ small onion • ~½ cup water • Lawry’s Adobo Seasoning • Lime + cilantro • Avocado oil Cook the tomatoes, chiles, jalapeño, garlic and onion in avocado oil until softened and charred. Transfer to a blender with the pan juices and about ½ cup water. Blend until smooth, season with Adobo, lime and cilantro to taste, then keep warm on low. FLAUTAS • Ala Madre low-carb tortillas or corn tortillas • Seasoned shredded chicken ( I added garlic powder salt and pepper to mine) • Monterey Jack cheese • Avocado oil Steam tortillas in a damp paper towel for about 1 minute until pliable. Fill with chicken and cheese, roll tightly and fry in avocado oil until golden and crispy. Pour the warm salsa over the flautas and load them up. I used lettuce, onion, pico, guacamole + sour cream. #flautasahogadas #lowcarbdinner
