@hopecrosby_eatss: Creamy chicken fajita pasta Ingredients: Chicken: 2 chicken breasts 1/4 sachet @sainsburys bbq fajita seasoning 1 tsp smoked paprika 1 tsp garlic Drizzle of olive oil Sauce: 1 onion 1/4 red, orange and yellow pepper 2 cloves garlic 1/2 sachet fajita seasoning 2 tsp smoked paprika 200ml chicken stock 1 tbsp tomato puree 200ml reduced fat crème fraiche 100ml milk 30g Parmesan Fresh parsley 150g pasta Method: - To a large bowl, add the diced chicken along with the seasoning, oil and give a good mix until coated. - Heat oil in a pan and add the chicken in, cook for around 12 minutes until white through and golden. Then remove from the pan and set aside - Finely chop the onions, pepper and garlic. Then to the same pan ass the chicken, add the onion and garlic and cook for a couple of minutes until softened, then add in the peppers. Leave again for a couple of minutes and then stir through the tomato puree. Turn down the heat and add in the chicken stock, then leave this on a gentle simmer for 5 minutes. - Once again reduce the heat, and stir though the crème fraiche and milk. Once combined, add the parmesan and fresh parsley. Cook on a medium-high heat for 10 minutes until thickened. Save a little of the sauce for the end. -Add in the cooked pasta, stir all the sauce over the pasta so it’s all coated, then add the chicken back in and do the same again. - Serve with some fresh parsley and a drizzle of that delicious sauce! #dinnerinspo #DinnerIdeas #mealideas #mealinspo
