Serve it warm with a scoop of vanilla ice cream and you’re good to go. Absolutely delicious. Peaches * 2 lb ripe peaches, peeled and cut into wedges * ⅓ cup packed brown sugar * 1½ tsp ground cinnamon * ½ tsp ground allspice * 1/2 tsp nutmeg * 1 tsp vanilla extract * 1 tbsp fresh lemon juice * 1 tbsp cornstarch Cobbler Cake * 1 cup + 2 tbsp all-purpose flour * ⅔ cup granulated sugar * 2 tsp baking powder * ¼ tsp baking soda * ½ tsp kosher salt * ½ cup unsalted butter, softened * ¾ cup buttermilk * 1 large egg * 1 tsp vanilla extract Method 1. Prep the peaches Score a small cross into the bottom of each peach. Blanch in boiling water for about 1 minute, then transfer immediately to an ice bath. Once cool enough to handle, peel the peaches, remove the pits and cut into wedges. 2. Season the peaches Toss the peaches with the brown sugar, cinnamon, allspice, vanilla, lemon juice and cornstarch. Make sure they’re evenly coated, then set aside while you make the batter. 3. Make the batter Whisk together the flour, baking powder, baking soda and salt. In a separate bowl, beat the softened butter and granulated sugar until light and creamy. Add the egg and vanilla and mix until combined. Add the dry ingredients in stages, alternating with the buttermilk, mixing just until you have a smooth batter. Don’t overmix. 4. Build the cake Grease a 9-inch round cake pan. Arrange the peaches across the bottom, making sure they’re spread out evenly. Pour the batter over the peaches and gently smooth the top. 5. Bake Bake at 350°F for about 45 minutes, or until the top is golden brown and a toothpick inserted into the cake comes out clean. 6. Flip it Let the cake cool in the pan for 10–15 minutes.
