@ivyskitchn: one pan, 15 minutes, and no pot of boiling water crispy bacon, caramelized kimchi, and a creamy gochujang sauce that coats every noodle. full recipe with more detailed instructions is linked in my bio on my substack! ๐ 2 packs frozen udon noodles (14โ16 oz) ๐ฅ 4 slices thick-cut bacon, chopped ๐ฅฌ 1 cup kimchi, chopped + 2 tbsp kimchi juice ๐ง 2 cloves garlic, minced ๐ถ๏ธ 1 tbsp gochujang ๐ฅ 1/2 cup heavy cream ๐ง 1/2 cup water or chicken broth ๐ถ 1 tsp soy sauce ๐ 1 tsp sugar ๐ง 1 tsp butter ๐ง freshly cracked black pepper ๐ฟ scallions, sesame seeds, chili oil, soft boiled egg to finish 1. cook chopped bacon over medium heat 4โ5 min until golden and crispy, leave the fat in the pan 2. add kimchi and garlic, cook 2โ3 min until softened and deepened 3. add frozen udon, cream, water, gochujang, kimchi juice, soy sauce, and sugar 4. separate the noodles with tongs and simmer 4โ5 min until the sauce thickens and coats 5. off heat, stir in butter and black pepper (an egg yolk here makes it silkier) #udon #kimchi #onepanmeal #koreanfood #easyweeknightdinner
