Taco Tuesday has never been easier! 🌮 Get the full recipe details below or at the link in our bio. ⤵️ Ingredients: 1 1/2 tablespoons olive oil 1 pound boneless skinless chicken breast, cut in ¾” inch pieces 1/2 cup finely chopped onion 1 teaspoon garlic powder 1 teaspoon kosher salt 1/2 teaspoon pepper 3/4 teaspoon chili powder 1/2 teaspoon cumin 1 cup green enchilada sauce or tomatillo salsa, divided 1 can pinto beans, drained 2 tablespoons melted butter 8 6-inch flour tortillas 2 1/2 cups shredded monterey jack cheese 1/2 cup sour cream Shredded lettuce and any other desired toppings Directions: Preheat oven to 375. Heat oil in a large skillet over medium-high heat. Season chicken pieces well with garlic powder, salt, pepper, chili powder and cumin. Add chicken to hot skillet and cook, undisturbed until browned and easily releases from the pan, 3-4 minutes. Add onion and stir chicken and cook, stirring occasionally, 3 more minutes. Bake 20-25 minutes or until tops of each tortilla are golden brown and toasted and cheese is melted and bubbly. Meanwhile, stir together remaining salsa with sour cream until well combined.
