I used to stay around the corner at the backpackers for work and lived off mudcrabs for months throw a couple crab pots in and I’m telling you, you’ll have muddies for days

My attempt at writing down the recipe: Corn Egg Tarts (makes 6) Egg Tart • Frozen tart shells; I found these in the freezer section of my local chinese grocery store • Egg tart filling (HermanAtHome recipe, half batch) Corn Diplomat Cream • 240g corn kernels (about 3 cobs) • 240ml whole milk • 3 egg yolks • 15g cornstarch • 40g sugar • Pinch of salt • 20g cold cubed butter • 120ml heavy cream Garnish • Corn slices • Sugar (for brulee) • Thyme (optional) Steps 1. Bake tarts with HermanAtHome's portuguese egg tart recipe, let them cool to room temp. I did a half batch, but I think the diplomat cream will be enough for a full batch too. (I had leftover). Make sure to cut more chunks of corn for garnish if you do the full batch! 2. Blend corn and milk, and strain it. 3. Measure out 240 ml of corn milk and heat to a simmer on the stove. 4. In a separate bowl, whisk yolks, cornstarch, sugar & salt. 5. SLOWLY add the hot corn milk to the mix from step 4, whisk, return to pot. Keep whisking until thickened. 6. Take off the heat, and whisk in butter. Cool to room temp and cover with plastic wrap. Chill in the fridge 30min to 1hr. This is your corn pastry cream. 7. Once the pastry cream is chilled, whip heavy cream to medium-stiff peaks, & fold into the chilled corn pastry cream. You now have a corn diplomat cream! 8. Pipe or spoon diplomat cream on cooled egg tarts 9. Sprinkle sugar on corn slices and torch before placing on top of tarts. Garnish with thyme. 10. Serve immediately, or store in fridge (though recommended to be eaten fresh) Do not reheat or the cream will all melt :c You might have leftover cream/milk, make a corn latte with it! 💖
