Prepare the vegetables Slice the courgettes, aubergine and tomatoes into thin, evenly sized rounds. Keeping them roughly the same thickness helps everything cook evenly. 5. Assemble Spread the pepper and tomato sauce across the bottom of a baking dish. Arrange the sliced vegetables on top in an alternating pattern — courgette, yellow courgette, aubergine, tomato — until the dish is completely filled. 6. Season Drizzle the vegetables with olive oil and season generously with salt and freshly cracked black pepper. 7. Bake Cover the surface with baking parchment and bake at 180°C / 350°F for around 70 minutes. Remove the parchment and return to the oven for another 15–20 minutes, until the vegetables are beautifully tender and lightly caramelised around the edges. 8. Plate Spoon some of the roasted pepper sauce onto the plate and arrange the ratatouille over the top.
