Banana bread cookies  Credit to Sarah Berney  Ingredients * 65g mashed ripe banana * 120ml melted butter * 200g light brown sugar * 1 egg yolk * 1 tbsp vanilla  * 165g plain flour * 1/2 tsp bicarb * 2 tsp cinnamon * 1/2 tsp fine sea salt * 150g dark chocolate chips Method 1. In a large bowl, stir together mashed banana, melted butter and sugar until combined. 2. Stir in the egg yolk and vanilla extract. 3. Add the flour, bicarb, cinnamon and salt. Fold together, dont over mix  4. Finally, gently fold in the chocolate chips.  5. Cover and rest in the fridge for 30 minutes until firm enough to handle. Scoop equal portions onto a tray and form into balls. Fridge/Freeze for another 15-30 mins  6. Preheat the oven to 175°C. 7. Bake for 10-12 mins on a lined baking sheet, leaving enough space around each to spread out. Leave to cool completely (if you can).  Banana Bread loaf  4 medium bananas, mashed 4 eggs  250g butter, soft  250g caster sugar or alternative 250g self raising flour or alternative  2 tsp baking powder  Splash of milk  2 tsp Vanilla/cinnamon/nutmeg Preheat oven to 160C fan.  In a stand mixer or using an electric whisk, cream together the butter and sugar until pale and fluffy.  Add the mashed banana and combine.  Add the eggs, flour, baking powder, and flavourings and mix well. Don’t over mix. Scrape down the sides.  Bake in your preferred tin.  Smaller tins or cupcake sized cakes take approx 20 mins to bake.  Larger loaf tins take 45-60 mins.  Check it’s done by sticking a knife in the middle.
