It’s because Rebecca Sugar was butthurt that Russia has strict rules about their TV and didn’t want to show a lesbian relationship. That’s also why Ruby was in a dress for the wedding it was really just so that Russia (or really any country at that time; Russia was just the first publicized case reported on) could change Ruby because, the Russians added a moustache on Ruby in the jailbreak episode and as a response, Rebecca sugar made Ruby the one in the dress in the wedding episode to stick it to the Russian sensors and that’s why Russia doesn’t exist in Steven universe world as well

OK, so if I’m not mistaken, the reason there is gems on the money is because of how long most of the crystal gems were alive so most of them were there throughout history, pearl even states to the mayor that she watched them be hunters and gatherers and go eons without Internet or even power. She even questions him of why they stopped doing that since to her it seemed useful, so I’m pretty sure the gems on there because they were technically in a way founding fathers so they put a gem on the money making it seem like it was just a signature at least I’m pretty sure I’m just going off of context clues we get in the show
