This Sri Lankan Pineapple Curry is a popular dish with different versions across Sri Lanka. This recipe is the Sri Lankan Muslim-style pineapple curry, traditionally made for festivals, weddings and special occasions. Unlike the Sinhalese-style version, which often includes coconut milk, this version is cooked without coconut milk and has a lovely sweet, spicy and caramelised flavour. Some people use jaggery instead of dates, so you can use either depending on your preference. Fried cashews are also optional, but for extra flavour, you can fry them in ghee and add them at the end. When choosing the pineapple, don’t choose one that is overly yellow or fully ripe. Look for a pineapple with a mix of light yellow and green. 🍍 Sri Lankan Pineapple Curry Ingredients Pineapple – 1 medium, not too ripe Oil – 2 tbsp Fenugreek seeds – ¼ tsp Mustard seeds – ½ tsp Cardamom pods – 2 Cinnamon stick – small piece Rampe (pandan leaf) – a few pieces Curry leaves – a few Green chillies – 2, slit Onion – 1, sliced Sugar – 4–5 tbsp, adjust to taste Dates – 5–6 Chilli powder – 1 tsp Salt – ½ tsp Chilli flakes – ½ tbsp Fried cashews – optional Method Peel the pineapple, remove the eyes and cut it into small, bite-sized pieces. You can keep the core or remove it if you prefer. Heat the oil in a pan. Add the fenugreek seeds, mustard seeds, cardamom pods and cinnamon stick. Let them splutter. Add the rampe, curry leaves, green chillies and onion. Sauté for a few minutes. Add the chilli powder and salt. Give it a good mix. Add the pineapple and cook for 30–45 minutes until the pineapple is nicely cooked. Pineapple naturally releases water while cooking, but if needed, add a little water. Once the pineapple is cooked, add the sugar and dates and cook for another 3–5 minutes, stirring occasionally, until the sugar caramelizes nicely and the pineapple becomes glossy and thick.
