For our first Valentine’s Day, Wayne was still in residency and was doing an overnight at the hospital so I made this and brought it to him… but lately, our kids kept sending us videos of everyone’s making steak frites, so I thought it was perfect to make for Valentine’s Day! The sauce is so good! Steak Frites w/Sauce Verte Steaks • 2 NY strips (1–1½”) • Salt • Neutral oil • 2–3 tbsp butter • 2 sprigs rosemary • 3–4 smashed garlic cloves Salt steaks generously. Heat pan until very hot; add neutral oil. Sear 2–3 min per side until deeply crusted. Add butter, rosemary, garlic and baste continuously. Transfer to 400°F oven 4–8 min until internal temp reaches 125–130°F (medium-rare). Rest 10 min. ⸻ Sauce Verte • Steak pan drippings • 1 large shallot, minced • 3–4 garlic cloves, minced • ¼ cup fresh parsley • 2 tbsp fresh tarragon • 1 tbsp fresh sage • 1 tbsp fresh chives (+ more for garnish) • 2 tbsp fresh basil • 2 tbsp walnuts • 4–6 anchovies • Juice of 1–2 lemons • 2 tbsp olive oil • 2 tbsp crème fraîche • Salt & pepper While steak rests, sauté shallot and garlic in the steak pan drippings 1–2 min until fragrant. Next, blend all remaining ingredients into a smooth green sauce. Pour blended sauce into the pan with shallot and garlic, stir until well combined & transfer everything back to the blender and blend  until smooth. Fries (Double Fry) • 5 russet potatoes • Neutral oil for frying • Salt Peel and cut into traditional French fry size. Soak in ice water 15–30 min. Drain and pat completely dry. Fry at 325°F for 3–4 min until pale and lightly cooked. Remove and rest a few minutes. Increase oil to 375°F and fry again 2–3 min until golden and crisp.
