@lilydavyy: These caramel apple pie cookies had me dreaming of the crisp fall weather☺️🍂so easy too! Apple mix: 2 apples cut 1 tbs lemon juice 1/2 cup water 1/4 cup brown sugar 1/4 cup sugar 1 tbsp cornstarch 1 tsp cinnamon 1/4 tsp nutmeg 1/4 tsp allspice 3 tsp butter (Mix all together in a saucepan on low heat, until mixture starts to thicken and apples soften slightly) Cookies: Whisk 1 cup melted butter with 1.5 cups sugar. Add 2 eggs, 1 tsp vanilla. Add 3 cups flour, 2 tsp cornstarch, 2 tsp cinnamon, 1 tsp baking powder, 1 tsp baking soda. Fold together, and let rest in fridge for 10 min. Whipped cream: 2 cups heavy whipping cream 4 tbs sugar 1 tsp vanilla bean extract Roll cookies in sugar, indent and add apple filling. Bake at 350 for 13 min.
