Americans' obsession with 'crisp' bacon is genuinely disturbing to literally anyone outside the US. Meat is not supposed to be crisp. You're cremating it.

OK, I no longer eat pork bacon because it no longer likes my digestive system. However, I use turkey bacon but outside having the asiago sourdough bread I would just do turkey bacon and eggs. Nothing special.
