Banana Chocolate chip muffins Ingredients 3 large ripe bananas , finely mashed 1 1/2 (190g) cups all purpose flour 6 tbsp (90g) unsalted butter, melted 1/2 cup (100g) granulated sugar 1/3 cup (65g) brown sugar 1 egg, room temp 3/4 tsp baking soda 1/2 tsp baking powder Pinch of salt 1 tsp cinnamon, optional 1 tbsp vanilla bean paste/vanilla extract 1/4 cup (60g) sour cream or whole milk Greek yogurt , room temp 1 cup (250g) semi sweet chocolate chips + more for topping Method: In a mixing bowl, roughly mash the bananas. Add the brown sugar and granulated sugar, then mix well to combine. Crack in the egg and mix for 2-3 minutes until the mixture turns a light pale color. Add in the butter, vanilla bean paste, and sour cream, and mix until well combined and blended. In a separate bowl mix dry ingredients, all purpose flour, baking powder baking soda salt and cinnamon powder. Mix to combine. Add dry ingredients to the wet batter. Gently fold in the batter add chocolate chips and mix to combine. Do not over mix the batter. Let the batter sit at room temperature for 1 hour un disturbed before baking. Evenly distribute the batter into the lined muffin tin. Pre heat oven to 425 F. Bake the muffins for 5 min then without opening the oven, change the temperature to 375 F and bake the muffins for another 15 min or until the toothpick comes out clean. Let cool completely before serving and enjoy. #muffins #bananamuffins
