Preheat oven to 325F. Grease and line a springform pan with non-stick spray and parchment paper. 2. For the crust: Combine the crust ingredients in a medium bowl and press the mixture firmly into the springform pan. Set aside. 3. For the cheesecake filling: In a large bowl, use a hand mixer to beat cream cheese until smooth. Add in the eggs one at a time while mixing. Then add in sugar, cocoa powder, sour cream, and vanilla, and beat for several minutes until smooth. Fold in the melted baking chocolate, then set aside. 4.
