Add the chicken back. Nestle the chicken into the quinoa mixture. Bring everything to a gentle boil, then reduce heat to low and cover. 7. Simmer for 15–20 minutes, stirring the quinoa once about halfway through. Cook until the quinoa has absorbed the liquid and the thickest portion of the chicken reaches 165°F. 8. Remove from heat and let the pan sit covered for about 5 minutes. Fluff the quinoa around the chicken. 9. Finish with fresh lime juice and your favorite toppings.
