I was planning to make Corned Beef & Cabbage for St. Patrick’s Day, but I was suddenly craving a Reuben so I made it! And it did not disappoint! After I took the meat out, I threw quartered cabbage into the brazing liquids and cooked that in the oven for about an hour (so that meal will still be had … it’s one of my all-time favorites ) Shout out to Russ from Rain Shadow Meats in Seattle- greatest butcher! Corned Beef Reuben Ingredients •	1 corned beef ( any size) •	¼ cup pickling spices •	2 cups beef bone broth •	Water Directions 1.	Preheat oven to 325°F. 2.	Place the corned beef in a Dutch oven. 3.	Add the pickling spices. 4.	Pour in 2 cups beef bone broth, then add enough water so the liquid comes about ¾–⅚ of the way up the sides of the meat. 5.	Cover and cook for about 1 hour per pound, until a fork slides easily through the meat. (I used an 8-lb corned beef, which took about 8 hours.) 6.	Let the meat rest in the cooking liquid for 1 hour, or refrigerate it in the liquid overnight if you prefer, then remove, trim the fat, and slice thick. Reuben Sauce (you can adjust all quantities to, however you like it) •	1 cup mayonnaise •	½ cup ketchup •	½ cup minced kosher dill pickle •	2 tbsp minced shallot •	2 tbsp minced chives •	1 tbsp creamy horseradish •	1 tbsp Dijon mustard •	1–2 tsp Worcestershire sauce •	1 tsp paprika •	1 tsp black pepper •	½–1 tsp salt, to taste Directions 1.	Combine all ingredients in a bowl. 2.	Stir until well mixed and refrigerate until ready to use. Directions 1.	Heat oven to 500°F. Place slices of rye bread on a sheet pan and toast for 1–2 minutes. 2.	Spread Reuben sauce on both slices of bread. 3.	Layer sliced kosher dill pickles, 4 slices thick-cut corned beef, and a generous pile of well-drained sauerkraut. 4.	Top with Swiss cheese (as much as you like). 5.	Place the cheese side under the broiler until melted, bubbly, and golden. 6.	Remove, top with the second slice of bread, cut in half, and serve. #stpatricks #stpaddysday #cornedbeef #reuben #sandwich
