Tonight I made one of our favorite quick dinners, I call it a Chop Salad Stir Fry Chicken Chow Mein. It's probably none of those things but it is delicious. I picked up a Rotisserie Chicken, some bagged Chopped Everything Salad, and prepped it in the early aftrernoon. It took no time to put together. It was better than any Chinese  I love this All-Clad square pan, it is so versatile! Chop Salad Stir Fry Chicken Chow Mein  This will serve 4 1-2 cups leftover rotisserie chicken, shredded (I just shred a Publix Chicken, I'm lucky if that is 2 cups, lol) 2 packages Ramen noodles or Cup of Noodles prepared and left to sit in the broth 2 bags Everything Chopped Salad Kit 3 tablespoons butter 1 tablespoon oil (I used peanut oil, you can use vegetable oil too) 3 cloves garlic, peeled and crushed ½ -1 teaspoon fresh ginger paste 1-2 tablespoon soy sauce ½ teaspoon sesame oil 1 -2 teaspoons hoisin sauce ¼ cup broth from the soup 2 tablespoons sliced almonds Dash of garlic salt Toasted onions with garlic, salt, and pepper (optional) 3 Scallions, chopped (divided, I added some to the mix and some to put on the top to plate) Have the ramen noodles prepared according to package directions. You will scoop them out with tongs, I added about ¼ cup of the broth. Place the butter and oil on a griddle or large sauté pan. Add the chicken on one side of the griddle just to heat through. Add the garlic, half the scallions (the white part), sauté for a minute or until you can smell the garlic. Add the chopped salad and the ginger. Season with the soy sauce, sesame oil, hoisin sauce and garlic salt. Add in the drained cooked ramen noodles (I lifted them out with tongs) and toss until warmed through. I added a tiny bit of the broth to the mix just to separate the noodles a little. I toasted the almonds on the side of the pan, sprinkled them with a little garlic salt. Plate the salad mix, top with the almonds, onions, everything bagel package, and some scallions, enjoy. You can also add some peanut butter (heat in the microwave for a minute just to soften it) to the noodles and top with chopped peanuts instead of almonds.
