This is Completely FALSE information. I and other people in the canning community have been dry packing potatoes for years. I also exclusively WB everything...including meat.

I dry can pints in pressure canning. They do just fine. I also open kettle tomatoes and pickles and can cheese tortellini. You do you, I realized awhile the government and lies ABOUT alot of stuff to help out commercial suppliers.

I've done it with water twice. the first batch (red potatoes) ended up slimy and gross. the second batch (russet potatoes) ended up lumpy mashed potatoes in a jar. both times were pressure canned. I'm definitely ready to dry pack some. 🤷

I dry can potatoes. They turn out perfect every time. I do the same for sweet potatoes and winter squash. The texture and taste is superior.

Thats why i dry pack in pints. browns the potatoes and turns out delicious. add a pad of butter and ranch for a great flavor !
