Paragraph guy here (I've read the manga & the LN). I'll explain some details that the anime missed or didn't really explain:
1st off, Granville is an awakened True Hero, so he is comparable to an awakened True Demon Lord like Rimuru. Not only that, but he has been an experienced Hero for 2,000+ years, as explained in the previous episodes. He may not possess an Ultimate Skill yet, but he'll awaken one in the next episode. Also, Granville's sword is a Mythical God-grade weapon, so it basically serves as a substitute for having an Ultimate Skill. People also seem to misunderstand Granville's attack, "Melt Slash/Strike." It is made of pure, concentrated Spiritrons that travel at sub-light speed and can bypass most conventional physical and magical barriers. Unless you have Rimuru's Ultimate Skill, Uriel (Absolute Defense), or an Ultimate Skill that can control/manipulate Spiritrons, you won't be able to properly defend against it.
2nd, idk why, but it seems like the anime adapted the LN (the main source material) differently. In the LN, Leon wasn't supposed to deflect the attack at all. Besides, even if he did deflect it, he wouldn't struggle like he did in the anime because he has the Ultimate Skill Metatron, which allows him to use high-level Holy Magic and control Spiritrons to a near-perfect level. Also, when Chloe activated "Suspended World" (Time Stop), Rimuru shouldn't have been able to move, just like everyone else except Chloe. I mean, he would still be able to perceive what was happening, but he wouldn't be able to physically move.
