@mamasdownsouthkitchen: Queso Rotel Pasta -1 pound ground beef -2 tablespoons butter -1/2 green bell pepper diced up -1/2 sweet onion diced up -1 tablespoon minced garlic -1 packet taco seasoning -1 teaspoon all purpose seasoning -black pepper to taste -1 can drained rotel -16 ounces queso (I like Gordo’s homestyle) -1/3 cup heavy cream -1 cup shredded cheddar cheese -16 ounces pasta (like penne) cooked While I cook the sauce I like to go ahead and boil my noodles while I cook so they’re done at the same time. For the sauce start by melting your butter in a hot skillet and then saute your peppers and onions in it for a few minutes to soften. Add in your beef, cook it until it’s done, drain the excess grease. I like to use a paper towel to absorb it. Add in your minced garlic and let that cook just a minute. Cut the heat down a little then add in your taco seasoning, all purpose seasoning,pepper, drained rotel, queso, and cream. Mix this altogether and bring to a simmer.
