To make 1.2kg yogurt you will need the following: 3L Milk 150g Plain Yogurt (make sure it has live cultures) Steps: 1. Boil Milk - It will not boil the way water does but you will see tiny bubbles along the edge of the pot 2. Once the milk has boiled, remove it from the heat and let it cool down. You know its cool well you can put your pinky finger in the milk for 10 seconds without burning. This takes about 30 to 45 minutes 3. Add the yogurt and mix well into the milk. If you add the yogurt while the milk is still hot it will kill the live cultures and the milk wont ferment into yogurt. 4. Close your pot or container, cover it in a blanket and place it in a warm place to ferment. You can ferment anywhere from 6 to 24 hours. The longer you ferment, the more sour the yogurt will be. I have found that 10 hours works perfectly. 5. Once fermentation is done you have yogurt and if you want greek yogurt you will have to strain the yogurt using a cheese cloth or a designated cloth- method is explained well in the video. Straining can take from 4 to 8 hours depending on a lot factors such as how much yogurt you are straining, or the thickness of the cloth you are using. Also how long you strain also depends on how thick you want your greek yogurt to be. (If you strain too long and it becomes too thick for your liking, you can just add back the whey/strained liquid until you get your desired consistency. 6. Transfer to the container you will be storing your yogurt in and whisk until smooth. Sterilization: Make sure your pot, spoon, and storage containers are thoroughly cleaned or sterilized before you start to ensure only the good bacteria (from your starter) grow. #greekyougurt #homemade #fatfreegreekyoughurt #southafrica
