Have you tried Edomae-style sushi before? There are many omakase restaurants today, but every now and then, you come across one that tells a deeper story. I recently visited Sushi Kenshin at Clarke Quay Central, where veteran sushi master Chef Kevin Ho has finally opened his own omakase concept after spending more than 30 years behind some of Singapore's most respected sushi counters. What caught my attention wasn't just the fish. It was the craftsmanship behind every piece. Chef Kevin began his journey at Nogawa Japanese Restaurant, widely recognised as Singapore's first authentic omakase restaurant, where he eventually co-led the sushi counter and served distinguished guests over the years. Today, that experience is reflected at Sushi Kenshin through traditional Edomae-style sushiâa craft that goes far beyond slicing fish. Every piece is carefully seasoned, balanced, and paired with Miyagi Sasanishiki rice, prepared with house-made red and white vinegar to complement each ingredient. Some highlights for me: ðĢ Nodoguro (Blackthroat Seaperch)âĻRich, buttery and incredibly delicate. ð OtoroâĻBeautiful marbling that simply melts in your mouth. ð The RiceâĻOne detail many people overlook, but one that truly elevates the sushi experience.
