Upgraded Chocolate Chip Cookies 🍪 A special thanks to all the people that have been tasting my cookies over the past few months. New and improved recipe 👩‍🔬👇 90g white sugar 200g brown sugar 112g (1 stick) unsalted butter 10g (2 Tbsp) dry milk powder 4g (1 tsp) kosher salt 1 whole egg 1 egg yolk 4g (1 tsp) vanilla extract 210g all-purpose flour 3g (1/2 tsp) baking soda 140g (5oz) dark chocolate, chopped into 1/4in chunks flaky sea salt (optional) 1. In a pan over medium heat, cook the butter until the water evaporates and milk solids begin to sink to the bottom. Add in the milk powder and stir, continuing to cook until foamy and browned, like the color of an old penny. Set aside until cool. 2. In a mixing bowl, whisk together flour, salt, and baking soda. Set aside. 3. In a large mixing bowl, combine both sugars and browned butter. Once mixed, add the egg, egg yolk, and vanilla extract. Mix until thoroughly combined. 4. Add the flour mixture to the wet mixture and mix until most streaks of flour disappear. Fold in the chopped chocolate. 5. Portion the dough into 50g balls on a baking sheet. Cover and let rest for at least 1 hour in the fridge, ideally overnight for more flavor. You can also freeze the balls of cookie dough and transfer them to a zip bag once frozen. 6. When ready to bake, preheat the oven to 350F. Place the cookie dough balls at least 3 inches apart on a parchment-lined baking sheet. 7. Bake at 350F for 12-13 minutes. Once done baking, transfer the baking sheet to a wire cooling rack and sprinkle with flaky salt if desired.
