The champagne was a legal maneuver. if she were to accept the champagne they could say that they compensated her and that she accepted the compensation. If she were to sue, they would have evidence that the matter was resolved to the satisfaction of both parties and that she was being frivolous in her lawsuit.

Why can’t they just be human? Can anybody say “I’m so sorry! This is so embarrassing, and of course doesn’t reflect the experience we aim to provide! Once this is over, please let’s sit down, have some champagne, and proceed with your appointment. Also…if the fire department can’t get this open soon, I’m giving them permission to break it.” They could have thanked you for using humor to lighten the mood, etc.
