@jujumaoo: 🇵🇭 Chicken Pyanggang | Filipino Food Bible Ep. 14 Link in bio for my mom’s restaurant! 💜 Pyanggang is easily one of my favorite and most iconic Tausug dishes. Its “blackness” comes from charred coconut, giving you this rich, spicy, smoky coconut flavor unlike anything else! *Disclaimer: The term bible in the title is not used in a religious context, it’s to denote a collection of recipes :) INGREDIENTS: Siyunog Lahing: - 2 mature coconuts, sun dried/roasted Pamapa Itum: - 240-250g of siyunog lahing - 150g red onions - 1 head of garlic - 2 tbsp ginger - 2 tbsp turmeric - 3-4 stalks of lemongrass, sliced - Red chili, to taste - 2 tsp of salt - 2 tsp black pepper Stewing Liquid: - Marinated chicken quarters - 2 red onions - 10-15 cloves of garlic - 1 tbsp of ginger, chopped - 3-4 stalks of lemongrass - red chili, to taste - 2 tbsp pamapa itum - 4 cans coconut milk - 2 tbsp fish sauce (optional) Sulu Style Sambal: - 3 tbsp of oil - 1 red onion - 1 head of garlic - 2 inches of ginger, minced - red chili to taste - 2 tbsp shrimp paste/alamang - ½ kg tomatoes, chopped - 400 ml of coconut milk - 1 tbsp sugar - Pepper tp taste Turmeric Rice: - 3 cups washed rice - 3 ¼ cup water - 2 tsp turmeric powder - ¼ cup coconut milk INSTRUCTIONS: - Roast the dried coconut until charred w/ little brown in the center, grind in blender/mortar. - Make pamapa itum by mixing siyunog lahing w/ aromatics. Coat chicken lightly and marinate overnight. - For the pyanggang, sauté the aromatics under “pamapa itum” add coconut milk, add chicken and simmer on low for 30-40mins until cooked - Remove chicken and reserve liquid for basting. Add fish sauce and reduce. Grill the chicken, basting as you go, until nicely charred. - For the sambal, sauté all ingredients under “sulu style sambal”. pour in the coconut milk. Season w/ pepper and sugar, and continue cooking until oils begin to separate. - Cook the turmeric rice with the water, turmeric, and coconut milk. - Serve everything together and enjoy! #FilipinoFoodBible #filipinofood #asmr #cookingasmr #tausug
