Some suggestions: Its a bit difficult to learn about the different funding systems of different countries, but for foundations that support the humanities Germany has the Humboldt foundation grants for post docs that are pretty great, there's also La Caixa for Spain+Portugal and then there's state funding, the only one I know that gives tenure track positions is the Portuguese Fundação para a Ciência e Tecnologia. But in general, small universities in smaller countries, which typically post their job openings at euraxess.ec.europa.eu/jobs and, so long as they accept teaching in English, are typically not super competitive, particularly for someone that had been in the American system.
