Every bite is warm, cheesy, and packed with bold Tex-Mex flavor, making this an easy family dinner everyone will love. Ingredients For the Beef Filling • 1½ lbs lean ground beef • 1 small onion, diced • 3 cloves garlic, minced • 1 tbsp taco seasoning • 1 tsp ground cumin • ½ tsp smoked paprika • ½ tsp salt • ¼ tsp black pepper • ⅓ cup beef broth For the Enchiladas • 8 large flour tortillas • 2 cups red enchilada sauce, divided • 2 cups shredded cheddar cheese • 1 cup shredded Monterey Jack cheese • 1 tbsp olive oil For Serving • Sour cream • Diced tomatoes • Chopped fresh cilantro or parsley • Sliced green onions Instructions 1. Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish and spread ½ cup of the enchilada sauce over the bottom. 2. Heat the olive oil in a large skillet over medium-high heat. 3. Add the ground beef and diced onion. Cook for 7–8 minutes, breaking up the beef until browned. 4. Drain any excess grease, then stir in the garlic, taco seasoning, cumin, smoked paprika, salt, and black pepper. Cook for 1 minute until fragrant. 5. Pour in the beef broth and simmer for 3–4 minutes until the mixture is moist and flavorful. 6. Spoon the beef filling down the center of each tortilla and sprinkle with a small amount of cheddar and Monterey Jack cheese. 7. Roll each tortilla tightly and place seam-side down in the prepared baking dish. 8. Pour the remaining enchilada sauce evenly over the tortillas. 9. Sprinkle the remaining cheddar and Monterey Jack cheese generously over the top. 10. Cover loosely with aluminum foil and bake for 20 minutes. 11. Remove the foil and continue baking for 8–10 minutes, until the cheese is melted, golden, and the sauce is bubbling. 12. Let the enchiladas rest for 5 minutes before serving. Serving Suggestions Serve with Mexican rice, refried beans, tortilla chips and salsa, guacamole, or a fresh garden salad for a complete Tex-Mex meal. Storage Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave until hot and the cheese is melted.
