Marinate with olive oil, cumin, paprika, salt, pepper, oregano, chicken bouillon, 5 grated garlic cloves, 1 lime + 1 orange. Mix well & marinate 1+ hour. Cook chicken in oil until golden & internal temp reaches 165°F. Remove, then sauté 2 sliced yellow onions in the same pan until caramelized. Plantains: Cut ripe plantains into thick or thin slices & fry until golden/dark to your liking. Season with salt. Beans: Sauté 2 garlic cloves in a little oil. Add 1 large can black beans, cumin, salt, pepper & 2 bay leaves. Simmer. Serve with 2 cups cooked rice, black beans, plantains & chicken topped with caramelized onions.
