Apple Cinnamon Pull-Apart Loaf: Soft, fluffy yeast dough layered with a buttery cinnamon apple filling, baked until golden and finished with a sweet apple glaze. Ingredients: Dough: 1 ½ cups lukewarm milk 2 teaspoons instant yeast ¼ cup caster sugar 4 cups plain flour 1 teaspoon salt 40g melted butter Apple Cinnamon Filling: 3–4 apples, peeled and finely chopped (depending on size) ¼ cup brown sugar 2 teaspoons cinnamon 1 teaspoon vanilla extract Pinch of salt 40g butter Apple Glaze: 1 cup icing sugar Reserved apple liquid from filling Method: Add the lukewarm milk, yeast and sugar to a bowl. Mix together and leave for 5–10 minutes until the yeast becomes foamy. In a large mixing bowl, add the plain flour and salt. Whisk together to combine. Pour in the foamy yeast mixture and mix until a dough starts to form. Add the melted butter and knead the dough for 8–10 minutes until smooth and elastic. Place the dough into a lightly greased bowl, cover and leave somewhere warm for 1–1½ hours, or until doubled in size. To make the apple cinnamon filling, add the chopped apples, brown sugar, cinnamon, vanilla, salt and butter into a microwave-safe bowl. Mix well. Microwave for 4–5 minutes, stirring halfway, until the apples have softened. Drain off the excess liquid, reserving it for the glaze, then allow the filling to cool completely. Once the dough has risen, roll it into a rectangle. Spread the cooled apple filling over half of the dough, leaving a small border around the edges. Fold the dough in half to enclose the filling and gently press the edges together to seal. Cut the dough into strips and arrange them upright in a lined loaf tin to create the pull-apart layers. Cover and allow to rise again for 30–45 minutes. Brush the top of the loaf with milk. Bake at 180°C for 35–40 minutes until golden brown and cooked through. While the loaf is still hot from the oven, mix the icing sugar with the reserved apple liquid until smooth.
