Around 1200 CE, Abd al-Latif al-Baghdadi described enormous Egyptian hatcheries that could incubate thousands of eggs without electricity or modern thermometers. Eggs were arranged inside specially built chambers while slow-burning dung fires supplied controlled heat. Workers adjusted small openings to let heat escape or keep it trapped inside. But the strangest part was temperature control. Experienced workers could hold an egg near the sensitive skin around the eye to judge whether it was becoming too hot. The eggs were repeatedly turned, and after roughly 20 to 21 days, chicks began hatching. The technique itself was an ancient Egyptian tradition, but it was still operating on a remarkable scale in medieval Muslim Egypt.
