Potatoes did not exist in Europe—or anywhere in the Old World—before Christopher Columbus made his voyages to the Americas. Potatoes were originally domesticated by indigenous people in the Andes mountains of South America (modern-day Peru and Bolivia) roughly 7,000 to 10,000 years ago. They remained completely unknown to Europeans until the Spanish Conquistadors explored South America in the 1530s, long after Columbus's initial 1492 landfall. Their arrival in Europe sparked what is known as the Columbian Exchange. When these tubers were first brought back across the Atlantic, Europeans were highly suspicious of them. Because potatoes belong to the nightshade family, many people believed they were poisonous or even associated with witchcraft. It took centuries for them to catch on. Initially, they were grown only for their flowers or used as animal feed. However, once people realized how calorie-dense and resilient the crops were in poor soil, they quickly became a vital staple crop for the European poor and fundamentally transformed diets across the globe.
