@fortheloveofyum: 🍑✨ PEACH CHEESECAKE ✨🍑 Creamy cheesecake + sweet, juicy peaches + a buttery graham cracker crust = the DREAMIEST summer dessert! 🤤🍰 This one looks gorgeous on the table and tastes even better. 🍑 Ingredients Graham Cracker Crust * 2 cups graham cracker crumbs * ½ cup unsalted butter, melted * ¼ cup granulated sugar Cheesecake Filling * 3 (8 oz) blocks cream cheese, softened * 1 cup granulated sugar * 1 cup sour cream * 1 tsp vanilla extract * 3 large eggs Peach Topping * 3 cups peeled & sliced fresh peaches * ½ cup brown sugar * 1 tbsp lemon juice * 1 tsp cinnamon * 1 tbsp cornstarch * 2 tbsp water * 1 tbsp butter 🍰 Directions 1️⃣ Make the crust: Preheat oven to 325°F. Mix graham cracker crumbs, melted butter, and sugar. Press firmly into the bottom of a 9-inch springform pan. Bake for 8–10 minutes, then cool. 2️⃣ Make the filling: Beat cream cheese and sugar until smooth and creamy. Mix in sour cream and vanilla. 3️⃣ Add eggs one at a time, mixing on low just until combined. Don’t overmix! 4️⃣ Pour the cheesecake filling over the cooled crust and smooth the top. 5️⃣ Bake for 55–65 minutes, until the edges are set but the center still has a slight jiggle. Turn off the oven, crack the door, and let the cheesecake cool inside for 1 hour. 6️⃣ Refrigerate for at least 6 hours or overnight for that perfect creamy texture. 7️⃣ Make the peaches: Add peaches, brown sugar, lemon juice, cinnamon, and butter to a saucepan.
