She has not felt physical skin to skin touch in years without hurting someone and absorbing not just their abilities if they're a mutant- also their identity and memories. What she went through was a Logical vs Emotional complex situation... Logically, she was thinking of how this might be her ONE chance to have a "normal" relationship while also being a leader for mutants who has the ability to understand anyone from her ability to collect their identity, thoughts, memories, and feelings and could help lead mutant kind down a more understanding and peaceful era, a "queen" (at least that was the idea Magneto had, not to mention the grooming they basically jump over)... compare that to the dangerous idea of choosing Gambit, who cant touch her at all (at that time point in the story) and she could possibly kill or put him into a coma at any point- as she did with her first boyfriend- going so far to drain him of his memories, identity, and absorbing parts of him into her- LITERALLY WHERE "SUGAH" CAME FROM BTW. Now go further- she cant be physical... not just sex- holding hands, holding someone in grief or fear, dancing, etc... now even further- FAMILY. She can't even have a family or risk that at all, especially the idea of HAVING kids. Now imagine the guilt of robbing someone from family life (at least feeling guilt from ones expectations before you). She rejected Gambit, not just for her brains fear over her love she had for him in her heart, she did it because she wanted him to also have a life past her not just wait on someone he could never be with... in the newer Uncanny comics (spoilers for anyone who isnt caught up or plans on reading them) she literally has control of her powers that she can be physical with Remy, the recent miniseries focusing on her kinda has a momentary loss of control, but she regains control overall- but they also kinda "adopt" this group of mutants called The Outliers... the entire point of Gambit and Rogue is that, yes, they are flawed and make many mistakes but they will ALWAYS find their way back to each other. Regardless of momentary pain, they are ultimately end goals for people who arent perfect but work together to be better.
