Sachie’s Shoyu Ramen 🍜🔥 #japanese #ramen #noodles #instafood Ingredients: 1 serving of dried ramen noodles (or your favorite noodles) Soup Base: 60ml Char Siu Tare & Stock (please see the Char Siu recipe) 300ml boiling water ½ tsp “Torigara” stock powder (Japanese chicken stock) or chicken bouillon powder ⅛ – ¼ tsp dashi powder 1 tsp pork lard Pinch of white pepper Salt, to taste (if needed) ** Chef’s Tip: The char siu stock is already seasoned, so taste the soup before adding any extra salt ** Homemade Mayu (Black Garlic Oil): 100ml neutral oil 10 cloves garlic, finely sliced Topping suggestions: 2 tsp Mayu (black garlic oil) 5-6 slices homemade Japanese char siu 1 soft-boiled egg, halved 3 slices of nori (seaweed) 1 spring onion, finely sliced Method: 1. Prepare the Mayu (optional). Heat the oil over low heat. Add the sliced garlic and cook gently, stirring frequently, until the garlic becomes very dark brown – almost black – but not burnt. Remove from the heat and allow to cool slightly. Blend the garlic and oil together until smooth. Set aside. 2. Prepare all your toppings before cooking the noodles. Ramen should be assembled and served immediately. 3. Bring a saucepan of water to the boil and cook the ramen noodles according to the package instructions. 4. While the noodles cook, warm your serving bowl with boiling water. This helps keep the soup hot for longer. Discard the water just before assembling. 5. In the warmed bowl, combine the Char Siu Tare & Stock, Torigara powder, dashi powder, pork lard (if using) and white pepper. Pour over 300ml boing water and stir until everything has dissolved. Taste the soup and add salt only if required. 6. Drain the noodles thoroughly, shaking off as much excess water as possible. 7. Place the noodles into the prepared soup. Arrange the char siu, egg, nori and spring onion on top. Finish with a drizzle of Mayu and serve immediately.
