I found some hake cheeks on the fish market and the first dish that came to mind was pil pil, the Basque dish that extracts the gelatin from the cheeks by cooking them gently in olive oil. I digressed wildly with a sauce based on blanched almonds, saffron, garlic, chilli and prawn. This was a lovely dinner to mop up with bread.
