Bring a large pot of salted water to a boil. Cook the potatoes for 15–18 minutes until fork tender. Drain and mash with butter, heavy cream, sour cream, garlic powder, salt, and pepper until smooth. Cover and keep warm. 2. Season the chicken breasts with garlic powder, onion powder, Italian seasoning, paprika, salt, and black pepper. 3. Heat the olive oil in a large skillet over medium-high heat. Sear the chicken for 5–6 minutes per side until golden brown and the internal temperature reaches 165°F (74°C). Transfer to a plate. 4. Reduce the heat to medium. Melt the butter in the same skillet and sauté the garlic for 30 seconds until fragrant. Stir in the chicken broth, heavy cream, Parmesan cheese, Dijon mustard, Italian seasoning, thyme, and black pepper. Simmer for 3–5 minutes until the sauce thickens into a creamy consistency. 5. Return the chicken to the skillet and spoon the herb cream sauce over each piece. Simmer for another 4–5 minutes until the chicken is fully coated and heated through. Stir in the chopped parsley. 6. While the chicken simmers, melt the butter in a separate skillet over medium heat. Add the baby carrots and cook for 6–8 minutes until tender. Stir in the honey, garlic powder, thyme, salt, and pepper, cooking for another 2–3 minutes until the carrots are glossy and lightly caramelized. 7. Divide the mashed potatoes among serving plates. Add the creamy herb chicken and spoon plenty of the sauce over the chicken and potatoes.
