Chicken Tikka Biryani Ingredients * 1 glass basmati rice, soaked 3 hours * 400 g boneless chicken * 1 tbsp black pepper powder * 1 tbsp cumin powder * ½ tbsp turmeric powder * 1 tbsp paprika powder * 3 tbsp biryani masala * 1 tbsp coriander powder * ½ lemon juice * 1 tbsp red food colour * ½ cup yogurt * 1 tbsp ginger-garlic paste * 1 onion, sliced * 3 tomatoes, chopped * 2–3 green chillies * Fresh coriander, handful * ½ tbsp salt + 1 tbsp salt for rice * 6–8 cloves * 2–3 bay leaves * 2 cinnamon sticks * 3 star anise * 2–3 lemon slices * 5 tbsp oil + oil for frying chicken Method 1. Marinate: Mix chicken with spices, lemon juice, food colour, yogurt and ginger-garlic paste. Marinate for 1 hour, then fry and set aside. 2. Gravy: Fry onion until brown. Add tomatoes, leftover marinade, green chillies, coriander, salt and biryani masala. Add 5 tbsp water, cover and cook until tender. Blend into a paste. 3. Rice: Boil water with cloves, bay leaves, cinnamon, star anise, lemon slices, salt and coriander. Add soaked rice and cook until 90% done. Drain. 4. Layer: Add rice, tomato gravy, fried chicken, tomato slices and coriander. Add another layer of rice. 5. Dum: Top with food colour and fried onions. Cover and cook on low heat for 15 minutes.
