@cardiff.mum: FOOD SHOP MAXXING EP 1: THE ART OF SHARING INGREDIENTS This is probably the biggest thing I do without even thinking about it now. I’ll never plan four completely separate meals and then buy four completely separate sets of ingredients. I start with one meal and look at what I’ll have left, then plan another meal that gives those ingredients a completely different job. At first you might need to actively think about it/use some of my ideas, but the more you do it, the more your brain just starts doing it automatically. You’ll pick something up in the supermarket or see a recipe online and already know two or three completely different things you can get out of the ingredients. Some really good ones to start with: Greek yoghurt + flour → pizza bases / flatbreads / naan / bagels / dough balls. Then use the remaining yoghurt for a chicken marinade, curry, raita or dressing. Feta → whip half with yoghurt for a gorgeous whipped feta to go under potatoes/veg, then you could crumble the rest through a completely different pasta, salad or traybake or use as a pasta sauce Cream cheese / crème fraîche → half can make a tomatoey creamy pasta sauce, then the rest becomes the base of a chicken & mushroom pie, creamy chicken traybake or stroganoff. Or a mushroom alfredo gnocchi then a chorizo tortellini soup. * 250g self-raising flour, plus extra for dusting
* 250g Greek yoghurt
* Good pinch of salt
For the carbonara style sauce:
* 20g butter
* 20g self-raising flour
* 200ml milk
* 1 garlic clove, finely grated
* 1 bay leaf
* 25g grated Parmesan
* Salt & black pepper
For the topping:
* 25g grated Parmesan
* 1 ball fresh mozzarella, drained and torn
* 4–5 rashers bacon, chopped
* 2 mushrooms, very thinly sliced
* Black pepper
* Chilli flakes, optional
* Rocket, to serve

Heat the oven to 200°C/180°C fan. Mix the flour, yoghurt and salt until it comes together into a dough. Give it a quick knead until smooth, adding a little extra flour if it’s sticky.
2. Divide into two. Roll each piece quite thinly into a long pizza shape directly onto baking paper. Transfer to trays and par-bake for 8–10 minutes, until the dough feels set but hasn’t taken on much colour.
3. Meanwhile, make the white sauce. Melt the butter in a small saucepan, stir in the flour and cook for 1 minute. Gradually whisk in the milk until smooth. Add the garlic and bay leaf and gently cook for a couple of minutes until it’s thickened but still easily spreadable. Remove the bay leaf, stir through 25g Parmesan and season with salt and plenty of black pepper.
4. Spread a thin layer of white sauce over each par-baked base. Sprinkle over the remaining Parmesan, then add the mozzarella, chopped bacon and a few very thin slices of mushroom. Don’t overload them or the bases can go soggy.
5. Turn the oven to a high grill. Put the pizzas near the top and grill for around 4–6 minutes, watching them closely, until the cheese is bubbling, the bacon is cooked and the edges are golden.
6. Finish with lots of black pepper and chilli flakes if you like, and serve with rocket on the side.
